Spinach gratin with egg Serves 4 This spinach gratin recipe is very easy to prepare and it’s great for dinner since you can cook it very fast and has very few carbohydrates. Furthermore, eggs contain lecithin which helps to break the fatty acids chains in the liver, improving sugar metabolism. Ingredients 500 g of cooked spinach (2 minutes) 100 g of finely chopped onion 1 tablespoon extra virgin olive oil 4 tablespoons of cream 1 teaspoon nutmeg 1/2 teaspoon black pepper 4 eggs Salt to your taste Whole wheat toast (optional) Instructions Turn the oven to 180 º C.
