Spinach gratin with egg

Serves 4

Diabetic recipes: Spinach gratin with eggThis spinach gratin recipe is very easy to prepare and it’s great for dinner since you can cook it very fast and has very few carbohydrates. Furthermore, eggs contain lecithin which helps to break the fatty acids chains in the liver, improving sugar metabolism.


  • 500 g of cooked spinach (2 minutes)
  • 100 g of finely chopped onion
  • 1 tablespoon extra virgin olive oil
  • 4 tablespoons of cream
  • 1 teaspoon nutmeg
  • 1/2 teaspoon black pepper
  • 4 eggs
  • Salt to your taste
  • Whole wheat toast (optional)


Turn the oven to 180 º C.
Saute the onion with olive oil. When transparent add the spinach well drained, saute one minute and turn off heat.
Add the cream, salt, pepper and nutmeg and mix well.
Spread four small trays suitable for oven with olive oil. Distribute the cooked spinach, make a hole in the middle of each small tray and lay an egg in each.
Sprinkle with grated cheese and bake for about 10-12 minutes.
